Roman Punch

Type: Punch

Ingredients:

  • 700 g Caster SugarFine white sugar.
    Substitute: Normal white or brown sugar, but stir or shake the cocktail well!
  • 1 1/2 litres ChampagneFrench sparkling wine, usually produced from Chardonnay and Pinot Noir grapes.
    Substitute: Sparkling wine, if you're on a budget!
  • 50 cl Dark RumSpirit distilled from fermented sugar cane. Dark rum originates from Jamaican and is full bodied and usually matured for around 5 years.
  • 3 Egg WhiteSeparated white from the egg. You can separate an egg by cracking it into a bowl, then scooping out the yolk carefully with a cupped hand - preferably someone else's!
  • 1 Orange (Whole)Whole, fresh orange - the rind and/or shell can also be used when this is required in a cocktail.
  • 20 cl Lemon JuiceFreshly squeezed lemon juice or the bottled lemon juice you can buy in the grocery store - up to you.
  • 60 cl Orange JuiceFreshly squeezed, bottled or carton orange juice.
  • 2 msr Triple SecSweet, orange Curacao.
    Substitute: Cointreau if you're not worried about your cocktails being 100% authentic.


Method:

Zest and slice the orange.
Beat the egg whites.
Mix all ingredients except champagne and rum in a punch bowl.
Chill for at least 2 hours.
Add champagne and rum to serve.

Serves: 27 people
