Negus

Type: Hot Drink

Ingredients:

  • 1 tspn BrandySpirit distilled from wine of grapes or other fruits e.g. see Apricot Brandy, Cherry Brandy or Blackberry Brandy. Normal non-flavoured brandy is smooth to taste and amber in colour.
  • 1 tspn Caster SugarFine white sugar.
    Substitute: Normal white or brown sugar, but stir or shake the cocktail well!
  • 1 Lemon (Whole)Whole, fresh lemon - the rind and/or shell can also be used when this is required in a cocktail.
  • 2 msr PortSweet fortified wine that can be found in red or white varieties. LBV Port is Late Bottled Vintage - the product of a single year's harvest.
    Where you'll find it in the duty free shop: Oporto, Portugal
  • 2 msr Red WineUse any red wine in your cocktails - unless specifically noted in the recipe.
  • 2 msr WaterTap or bottled water - your choice.
  • small pinch NutmegA spice that comes whole or ground. If you have whole nutmeg, grate it before adding it to cocktails.


Method:

Slice half the lemon thinly.
Heat all ingredients in a saucepan.
Strain into a heat-proof goblet.

Note: Use LBV port, 1 measure Claret red wine and 1 measure Burgundy for an authentic drink.
