Pisco Sour

Type: Aperitif

Ingredients:

  • 1 dash Angostura BittersFlavour enhancer made from herbs, spices and berries. Only a few dashes are added to cocktails so a bottle lasts a long time.
  • 1/2 Egg WhiteSeparated white from the egg. You can separate an egg by cracking it into a bowl, then scooping out the yolk carefully with a cupped hand - preferably someone else's!
  • 1/2 Lime (Whole)Whole, fresh lime - the rind and/or shell can also be used when this is required in a cocktail.
  • 2 msr PiscoClear brandy distilled from fermented muscat grape remains that are a by-product of wine production.
Where you'll find it in the duty free shop: Peru or Chile
  • 1 tspn Sugar SyrupMake your own sugar syrup by dissolving equal quantities of water and sugar before simmering gently for 2 minutes. Cool and store in a bottle or jug.

Method:

Fill a rocks glass with broken ice
Squeeze lime into glass, add spent shell
Shake remaining ingredients well & strain into glass
Add a mint sprig
